The company I contadini is located in Salento which is on the south-eastern end of Puglia. This place practically offers sunshine all year round.
They cultivate, harvest and develop their own products only with exceptional raw materials and extraordinary know-how for more than 30 years.
These are artichokes of the "brindisino" variety. Cultivation begins from October and harvesting begins from May.
The processing is done in the fridge within eight hours of harvesting. Cleaning and peeling is done manually with a small kitchen knife. They are then put raw in jars only in extra virgin olive oil to fully appreciate this incomparable taste.
