The I contadini company is located in Salento, which is located on the south-eastern end of Puglia. This place offers virtually sun all year round.
They cultivate, harvest and develop their products themselves only with exceptional raw materials and extraordinary know-how for more than 30 years.
These are artichokes of the "brindisino" variety. Cultivation begins from October and harvest begins from March. The first are picked with the stems.
Processing takes place in the fridge within eight hours of harvest. Cleaning and peeling is done manually with a small kitchen knife. They are then put raw in jars in extra virgin olive oil and sunflower.
The rest is up to you to discover it on your plate.
