The I contadini company is located in Salento, which is located on the south-eastern end of Puglia. This place offers virtually sun all year round.
They cultivate, harvest and develop their products themselves only with exceptional raw materials and extraordinary know-how for more than 30 years.
Green tomatoes are grown in the farm company's fields from May and then picked by hand in July when the tomatoes are not yet ripe. They are cut into slices and they continue to ripen under salt using techniques typical of this region.
At the end of this operation, they are mixed with capers, eggplants and other Mediterranean spices and put in a jar with extra virgin olive oil.
