The I contadini company is located in Salento, which is located on the south-eastern end of Puglia. This place offers virtually sun all year round.
They cultivate, harvest and develop their products themselves only with exceptional raw materials and extraordinary know-how for more than 30 years.
Eggplants are cultivated from April and are picked by hand between July and August. Cut into strips with their skins, they are then salted and dried in the sun for 3-4 days to be subsequently cleaned with water and vinegar. The last phase is the stuffing with tuna and capers from Salento (Racale). To finish in a jar in extra virgin olive oil.
