The company Antica Acetaia Dodi is located in Casalgrandre in the region of Emilia-Romagna. It is one of the most important and prestigious producer of balsamic vinegars in Reggio Emilia (Reggio Emilia).
Saba also called mosto cotto (cooked must) is produced with the same grapes used for real balsamic vinegar. It is the reduction of sweet grape must which has been cooked for a long time and slowly in a cauldron. It is then kept for 2 years in chestnut and oak barrels. It is produced in the purest Emilian tradition.

Dodi was founded in 1891 in Gavasseto a small town in the Province of Reggio Emilia. Currently the tradition remains unchanged and continues to offer exceptional vinegars.
Saba is a dense syrup of brown color, sweet flavor with a pleasant fruity, intense and slightly toasted scent.
Its preparation is long and very complex. Its method of production dates back to Roman times. Nowadays it is this method which is still used by the best craftsmen.
It can be stored at room temperature.
We suggest you enjoy it over ice cream, panna cotta, ricotta or pancakes.
You can also use it on salads, cheeses or with meat.
