Benedetto Cavalieri artisanal pasta is produced in Maglie in Puglia. They are internationally renowned among gourmets and starred restaurants.
They are produced with 100% Italian quality durum wheat and with a delicate method that includes very slow drying at low temperature. This makes it possible to obtain an exceptional paste rich in starch and flavor.
Bronze wire drawing provides a rougher surface which holds sauces better.
For optimal cooking, we advise you to salt the water with coarse sea salt and to use 1 liter for 100 grams of pasta.
We suggest you taste the rotelle with a guanciale-based tomato passata.
