The name of this format comes from its similarity to a grain of rice.
The idea came to produce a dough to be able to prepare a southern risotto.

This artisanal dough produced by Gentile in Gragnano near Naples will take you on a journey to the south of Italy.
It is produced with 100% Italian quality durum wheat and with a very slow drying which allows to obtain an exceptional dough.
Its bronze drawing provides a rougher surface that better retains sauces.
For optimal cooking, we advise you to salt the water with coarse sea salt and to use 1 liter for 100 grams of pasta.
We suggest that you taste the riso di semola in the same way as a traditional rice-based risotto.
