The company I contadini is located in Salento which is on the south-eastern end of Puglia. This place practically offers sunshine all year round.
They cultivate, harvest and develop their own products only with exceptional raw materials and extraordinary know-how for more than 30 years.
Fennel cultivation begins in September and harvesting begins in February.
Cleaning and peeling is done manually. They remove the toughest part of the fennel. The most tender part is kept and cut into thin slices. The carpaccio is put raw in a jar in extra virgin olive oil to fully appreciate this incomparable taste.
