They cultivate, harvest and develop their own products only with exceptional raw materials and extraordinary know-how for more than 30 years, favoring the short supply chain.
These are red onions from salento. Cultivation begins from February in the open air and manual harvesting begins from June when they reach maturity.
Cleaning, peeling, cutting and drying are done naturally. This method preserves the crunchiness of the onion. Then, They macerate in cooked must (mosto cotto) of grapes according to an ancient recipe of this territory.
We suggest you taste these onions with white meat or cheese. Also to be tested on a pizza or focaccia.
